I plain flat screwed this week up. I could blame it on getting ready to get the boys ready to go back to school. I could blame it on trying to keep Colby’s medicine dosages straight on their ever changing schedule. I could blame it on the dog. However, the fact of the matter is, I am an idiot.

I forgot the graham crackers at the store. I subbed Pepperidge Farm Chessmen Cookies, which worked out really, really well. But then in rushing to get this done, I accidentally made the Florida Pie filling. I topped it with meringue and called it a day. The pie tasted fantastic and I would make it again. Its just not the right pie for this week.

Check out the ladies and gents, who I am sure made the proper pie for the week, from the TWD blog roll. And thanks to Linda of Tender Crumb for picking this fab pie. I love the citrusy ones!

It looks wonderful.
Comment by chocolatechic August 25, 2009 @ 7:47 amThat looks delicious, no matter what filling you used. I love the idea of using chessmen to make the crust–they’re one of my favorites.
Comment by Di August 25, 2009 @ 8:37 amMy kids just discovered Chessmen cookies – now I have to skip that aisle in the market so they don’t try and get me to buy them!
Comment by Megan August 25, 2009 @ 11:54 amI was expecting some catastrophe, like the filling wouldn’t set or it got knocked over. But even with the confusion you still made what probs was a great dessert, and the meringue topping looks pretty!
Comment by Christina August 25, 2009 @ 1:19 pmoh well..you made something yummy and that’s all that counts! i like experimenting with other types of cookies for crumb crusts…any thin, crispy cookie usually works out fine.
Comment by steph (whisk/spoon) August 25, 2009 @ 2:02 pmYou still got a lime pie out of the deal, and the cookie crust sounds fantastic!
Comment by Jill August 25, 2009 @ 5:46 pmIt looks great! And was deliciious. So who cares?
Comment by Wendy August 25, 2009 @ 7:05 pmGreat idea on using a rectangular tart pan! It looks wonderful. Since the Pepperidge Farm Chessmen cookies are buttery, you didn’t miss out on All the butter that goes into the recipe.
Comment by Valerie Catrice August 26, 2009 @ 1:08 pmThis is only my third go-around as a TWD member but I think its brilliant! Thank you for starting it up.
Hey, they’re both lime and pie, so close enough, if you ask me. It looks fantastic, your meringue looks yummy.
(I thought the Florida pie was better anyway.)
Comment by Jacque August 26, 2009 @ 2:44 pmThat looks really awesome and sounds so good right now!
Comment by Jillian August 26, 2009 @ 6:34 pmLOL! You crack me up. I saw when you posted this on the P&Q, at least you ended up with an EDIBLE pie, which I didn’t :-/
Comment by Amanda August 26, 2009 @ 10:16 pmThis is why I love you. You do exactly the same kind of thing I would do! The pie looks VERY tasty.
Comment by Mary August 27, 2009 @ 7:22 pmThrough all of the priorities and distraction you’ve been dealing, gotta give you kudos for getting a delicious pie on the table!
Thanks for baking along with me this week Laurie!
Comment by Linda @ Tender Crumb August 29, 2009 @ 2:38 pmVery funny! Pie looks great though! Hnag in there, you are doing a fantastic job with everything!! Hugs much!!
Comment by Cecille September 1, 2009 @ 12:32 pmThis does *not* look like something an idiot would put together! It’s the perfect tart/pie…. LOVE the shell and the meringue treatment (I’m browning meringue like crazy these days… I love that little torch). Hopefully your schedule will slow down and you can “concentrate” – although this look fantastic as is!
