I saw this recipe while blog surfing. It tweaks Ina Garten’s Outrageous Brownie recipe by omitting the nuts and chocochips and adding Oreo’s instead. Knowing my kids will not eat nuts, this was a good option for us. I tweaked the recipe myself adding semisweet and bittersweet chocolate. My family loves brownies. I knew this would be a hit.
These are extremely rich brownies. Now, I have never made Ina Garten’s brownies before. Maybe making them with Oreos makes them richer than intended. But these bad boys cannot be eaten without a FULL glass of milk. Maybe 2 glasses! If your an Oreo lover, these are right up your alley. We all loved them. This recipe makes a ton too. So, I was able to freeze some.
Super Rich Oreo Brownies
1 pound unsalted butter
1 pound semisweet chocolate, chopped
6 ounces bittersweet chocolate, chopped
7 large eggs
2 tablespoons instant espresso powder
2 tablespoons vanilla
2 1/4 cups sugar
1 cup plus 1/4 cup all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
1 package Oreo cookies, broken into pieces
Preheat the oven to 350°.
Butter and flour an 12″ x 18″ x 1″ baking pan. In a heatproof medium bowl set over a saucepan of simmering water, heat butter, chopped semisweet and bittersweet chocolate until melted and smooth. Allow to cool slightly.
In a large bowl, whisk eggs, coffee, vanilla and sugar. Blend chocolate mixture into egg mixture; cool to room temperature.
In a medium bowl, sift together one cup flour, baking powder and salt. Add flour mixture to chocolate mixture. In a small bowl, stir Oreos and remaining 1/4 cup flour. Add Oreo mixture to chocolate mixture. Pour batter into baking pan and smooth top with a rubber spatula.
Bake for 20 minutes, then rap the baking sheet against the oven self to force the air to escape from between the pan and the brownie dough. Bake for about 15 minutes, until a toothpick comes out clean. Do not overbake! Allow to cool thoroughly, refrigerate, and cut into 20 large squares.
